The ISO 22000 standard was adopted by the International Organization for Standardization (ISO) in 2005. The standard represents a food safety management system and includes elements of the HACCP system "Hazard Analysis and Critical Control Points"
The HACCP system was developed by the World Health Organization (WHO)
In Ukraine, since 2007, the standard DSTU ISO 22000-2007 "Food Safety Management System. Requirements for any organization in the food chain" was adopted, which is essentially a translated copy of the ISO 22000-2005 (HACCP) standard
The ISO 22000 standard represents a comprehensive food safety management system that monitors product manufacturing throughout the entire production line
The HACCP system ensures control of food product manufacturing at all stages from raw materials, equipment, production, storage to the sale of finished products and monitors critical points in the technological process where the product may become unsafe for consumers. It includes chemical, mechanical, and biological components
The ISO 22000 (HACCP) standard is applied in virtually all countries of the world by food product manufacturers
The requirements of the ISO 22000 (HACCP) standard apply to manufacturing enterprises throughout the food chain, from food product manufacturers to raw materials, feed, and food packaging producers, enterprises that transport and store food products, as well as retail and food service establishments
Today, many foreign countries have mandatory legislative requirements for food chain enterprises to have an implemented and certified food safety management system under ISO 22000 (HACCP). In Ukraine, certification under ISO 22000 (HACCP) will become mandatory in the near future
Modern consumers place high demands on food manufacturers regarding product quality, packaging, storage, and must be confident in its complete safety
Many retail chains in Ukraine and abroad, such as Auchan, Metro, Silpo, ATB, and others, only allow products from manufacturers certified under ISO 22000 (HACCP) into their retail network
